The Luxury Editor revisited Spain’s METT Hotel & Beach Resort to get the inside track on the new menu at Isola, a beautiful restaurant that promised a gastronomic journey through home-made pasta and Italian favourites, and modern classics, paired with the restaurant’s extensive wine selection, curated from the most sought-after wine producing regions in Italy.
Welcome summer with the fresh flavours of Andalucia and Italy, including the new ‘Carpaccio di cuore de bue’ – local tomatoes from the region’s most celebrated kitchen gardens, finely sliced, and dressed with pecorino cheese, fried garlic, and baby sage leaves – a simple dish that was layered with flavours and textures.
To satisfy even the most demanding appetite, choose one of the new pasta dishes, including the tasty Bucatini alla carbonara. Made with think Bucatini pasta, a little like a robust, hollow spaghetti, which is popular in Rome. The dish is richly flavoured with pecorino cheese and delicious guanciale salt-cured meat.
There are new meat dishes too, including the Costa di manza, a 400gram beef ribeye, prepared to perfection.
The menu is still packed with Italian dishes that have become favourites since Isola opened, such as the light and delicious pinsa pizzas, which are bursting with texture and flavour, yet without the heavy feeling often associated with doughy pizzas. And don’t forget the tiramisu!
Cocktails as always were beautifully presented, while the wine list included the option to enjoy different wines by the glass.
The Mediterranean setting of Isola offers inside dining in the sophisticated (and air-conditioned) restaurant, with plush seating, a long bar, and the wine cellar on display. This area spills out onto a covered terrace, where tables are set amongst lush foliage, with views to the Azure Pool.
