One of the remarkable gourmet menus is one that showcases the artisan salts from neighbouring Salinas d’Es Trenc.

This autumn we visited this picturesque part of Mallorca and indulged in fine dining by Chef Jhonatan Maldonado that mixed Mediterranean, South American and Mallorca influences – creating a truly memorable meal.

Each crafted element included a touch of gourmet salt, whether it was with the handmade olive oil bread, or as a subtle addition to the remarkably creative pre-starters, or even the pudding.

The first appetiser of Mallorca red prawn empanada set the tone for a lunch of layered flavours.

The starter of ceviche, with local ramallet tomato and pisco sour foam was inspiring. Perfectly complemented by the lemon and lavender sal d’es Trenc.

The meal continued with fish, and then wagyu beef (local to the island) before reaching the exquisite pudding so perfectly completed by olive salt and a ‘cappuccino’ made from olive tree leaves.

Salt Tour

The Salinas d’Es Trenc are just a few minutes’ drive away; they can be seen from the private terraces of the guest suites. The artisan salt ponds make for a fascinating tour, and I am sure you’ll be tempted by the gourmet salts in the boutique store. Depending on the season you will also see plenty of flamingos in the nearby wetlands.

Private Beach Experience

Another special memory was visiting the protected beach near Fontsanta Hotel. Privileged guests reach this stunning natural landscape by private transfer via an exclusive route through the protected countryside. the destination is Refugu d’Es Trenc, a charming beach cottage that is for the exclusive use of guests. It’s steps from the crystalline waters of the Mediterranean.
